These brookies, half-brownie half-cookies, are the perfect way to enjoy your two favorite sweet treats. They are rich, fudgy, and decadent. They are gorgeous too, and you can be sure that kids and adults would love to have them for a snack or dessert.
Ingredients
Brownie layer:
1 c. unsalted butter (melted)
1 1/2 c. cocoa powder
1 3/4 c. light brown sugar (packed)
3/4 c. granulated sugar
4 large eggs
1 tbsp. vanilla extract
3/4 c. all-purpose flour
1 tsp. kosher salt
Chocolate chip cookie layer:
1 1/4 c. all-purpose flour
1/3 c. semisweet chocolate chips (heaping)
1 tsp. kosher salt
1/2 tsp. baking soda
1/2 c. unsalted butter (melted and cooled slightly)
1/2 c. granulated sugar
1/4 c. light brown sugar (packed)
1 large egg
1 large egg yolk
1 1/2 tsp. vanilla extract
Instructions
- Preheat the oven to 350 degrees Fahrenheit and then grease a 9X13-inch pan with cooking spray.
Brownie layer:
- In a large mixing bowl, whisk together the melted butter and cocoa powder.
- Add the sugars and whisk to combine.
- Add the eggs and vanilla and whisk just until combined.
- Sprinkle the flour and the salt over the batter. Gently fold the dry ingredients into the wet ingredients using a flexible spatula until no visible flour remains.
- Transfer the batter to the prepared pan. Spread evenly.
Chocolate chip cookie layer:
- In a medium bowl, stir together the flour, baking soda, chocolate chips, and salt.
- Whisk together the melted butter and sugars in a separate medium bowl until thick and glossy for about 30 seconds. The color should also be slightly lighter.
- Add the egg and yolk, one at a time, followed by the vanilla.
- Fold the dry ingredients into the wet ones until combined. Be sure not to over mix.
- In dollops, slowly drop the cookie dough on top of the brownie layer. Spread evenly using an offset spatula.
- Bake for about 30 to 35 minutes.
- Let cool before slicing into squares.
Notes
- When greasing the pan, you can also make use of softened butter and then line it with parchment paper.

To ensure that the butter and the cocoa powder combine smoothly when preparing the brownie layer, the butter should still be warm. Aside from an offset spatula, you can utilize a butter knife as well.
