This ice cream recipe will surely make you appreciate more the flavor of avocado. Made with fresh fruit and a few basic ingredients, this can rival the branded avocado ice cream out there.
2 ripe avocados (peeled, halved, and pitted)
1 can full-fat coconut milk
1 ripe banana (cut and frozen)
2 tbsp lemon juice
3 tbsp maple syrup
about 5 large mint leaves
- Put a loaf pan in the fridge and allow to chill for at least 30 minutes. Or better yet, leave it there overnight.
- Put avocados in a high-speed blender and then add the solid part of the coconut milk. Set aside the liquid for later use. Also add banana, lemon juice, maple syrup, and mint leaves. Blend until smooth and creamy.
- Pour the mixture into the loaf pan. Distribute evenly using the back of a spoon.
- Freeze for at least 4 hours.
Before serving, it is highly recommended to let the ice cream soften for about 10 to 15 minutes.
