Description

Otherwise, all the other procedures can take only about 40 minutes, including baking time.

Cake:

½ box white cake mix

2 eggs

1 1/2 tablespoon of shortening, melted

½ cup of cold water

Filling:

½ box white cake mix

2 eggs

1 1/2 tablespoon of shortening, melted

½ cup of cold water

1 pack of raspberry jello powder

2 cups of boiling water

1 cup of cold water

1 container of Cool Whip

Fresh raspberries

Toppings:

1 pack of raspberry jello powder

1 tablespoon of gelatin

2 cups of boiling water

1 cup of cold water


Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. To make the cake, mix white cake mix, eggs, shortening, and ½ cup of water in a bowl using a handheld mixer or wooden spoon. Pour the mixture into a springform pan. Bake for 20 minutes and let it cool down.
  3. To prepare the filling, mix the raspberry Jello powder with hot water in a separate bowl. Add the cold water and Cool Whip and mix. Carefully pour the filling on top of the cake to have a smooth surface. Round up the edges with fresh raspberries and chill for 1 hour.
  4. To make the topping, pour boiling water in a bowl containing raspberry Jello powder and gelatin. Stir while mixing cold water. Carefully pour the lukewarm mixture over the filling. Chill for 1 hour until the glaze is all set.
  5. Remove the springform pan and top with piped whipped cream.
  6. Raspberry Jello cake is now ready to be sliced and served.

Notes

It is very important to complete the chilling time of one hour or even more. This is to achieve the ‘coldness’ of this cake which gives a higher level of satisfaction if it is even colder. The chilling time will also be enough time for the toppings and fillings to get more consistency.
